Baked Vanilla Sponge Pudding With Sweet Sauce

Ingredients

  • 1 pint milk
  • 1/2 cup butter
  • 1 cup flour
  • cold milk (for mixing flour)
  • 8 egg yolks
  • 8 egg whites
  • 2 egg yolks (for sauce)
  • 1 cup powdered sugar
  • 4 tablespoons boiling cream or milk
  • flour (for sauce)
  • wine (optional)

Method

  1. 1 Scald 1 pint of milk until boiling hot. Add 1/2 cup butter and stir until melted.
  2. 2 Mix 1 cup flour with a small amount of cold milk to form a smooth paste. Stir this into the hot milk and butter mixture. Cook, stirring constantly, until thick and smooth without lumps.
  3. 3 Remove the thickened mixture from heat and let it cool slightly. Beat 8 egg yolks lightly and stir them into the mixture.
  4. 4 Beat 8 egg whites to a stiff foam. Gently fold the whites into the batter.
  5. 5 Pour the batter into a dish and place it in a pan of hot water. Bake in a moderate oven (350°F) until set.
  6. 6 For the sauce, beat 2 egg yolks with 1 cup powdered sugar until creamy. Fold in beaten egg whites, then stir in 4 tablespoons boiling cream or milk and a little flour. Add wine if desired.
