Baked Vanilla Rice Pudding With Fruit
Ingredients
- ½ cup rice
- Water for soaking
- Salted boiling water
- 3 cups milk
- ½ cup sugar
- 1 tbsp cornstarch
- Cold milk for slurry
- Vanilla extract
- Brandy peaches or fruit for serving
Method
- 1 Soak rice in water for one hour, then boil in salted water for 20 minutes.
- 2 Heat milk and sugar in a saucepan. Mix cornstarch with cold milk, stir into milk mixture, and boil.
- 3 Add cooked rice to the milk mixture and stir until thickened like custard.
- 4 Turn into a pudding dish, flavor with vanilla, and bake at 300°F until delicately browned.
- 5 Serve cold with brandy peaches or preferred fruit.
