Baked Vanilla Rice Pudding With Fruit

  • ½ cup rice
  • Water for soaking
  • Salted boiling water
  • 3 cups milk
  • ½ cup sugar
  • 1 tbsp cornstarch
  • Cold milk for slurry
  • Vanilla extract
  • Brandy peaches or fruit for serving

Method

  1. 1 Soak rice in water for one hour, then boil in salted water for 20 minutes.
  2. 2 Heat milk and sugar in a saucepan. Mix cornstarch with cold milk, stir into milk mixture, and boil.
  3. 3 Add cooked rice to the milk mixture and stir until thickened like custard.
  4. 4 Turn into a pudding dish, flavor with vanilla, and bake at 300°F until delicately browned.
  5. 5 Serve cold with brandy peaches or preferred fruit.
