  • 1 pinch salt
  • 1/2 teaspoon vanilla extract
  • 3 cups milk
  • 6 tablespoons sugar (for caramel)

Method

  1. 1 Beat eggs, 6 tablespoons sugar, salt, and vanilla in a bowl.
  2. 2 Scald milk, then slowly pour into egg mixture while stirring constantly.
  3. 3 Melt 6 tablespoons sugar in a baking dish until brown (no water).
  4. 4 Pour custard into caramelized dish. Place in a pan of hot water.
  5. 5 Bake in a slow oven (300°F) for 45+ minutes until set. Do not boil water.
  6. 6 Cool completely, then invert onto a serving dish.
