Baked Vanilla Bean Custards
Ingredients
- 1 quart milk
- 1 vanilla bean, cut into slips
- ¼ pound white sugar
- 4 whole eggs
- 4 egg yolks
- Sugar for garnish
Method
- 1 Boil milk, vanilla bean slips, and sugar slowly for 15 minutes. Remove from heat and let cool completely.
- 2 Whisk 4 whole eggs and 4 egg yolks together. Stir the egg mixture into the cooled milk.
- 3 Pour mixture into cups and place in a water bath. Bake until set.
- 4 Let custards cool, then grate sugar on top before serving.
