Baked Vanilla Bean Custards

Ingredients

  • 1 quart milk
  • 1 vanilla bean, cut into slips
  • ¼ pound white sugar
  • 4 whole eggs
  • 4 egg yolks
  • Sugar for garnish

Method

  1. 1 Boil milk, vanilla bean slips, and sugar slowly for 15 minutes. Remove from heat and let cool completely.
  2. 2 Whisk 4 whole eggs and 4 egg yolks together. Stir the egg mixture into the cooled milk.
  3. 3 Pour mixture into cups and place in a water bath. Bake until set.
  4. 4 Let custards cool, then grate sugar on top before serving.
