  • butter
  • milk
  • salt
  • pepper
  • melted butter

Method

  1. 1 Bake medium-sized potatoes until fully cooked.
  2. 2 Cut potatoes in half lengthwise and scoop out the inside, being careful not to break the skins.
  3. 3 Mash the potato flesh smooth with butter and a little milk. Season with salt and pepper to taste.
  4. 4 Heat the potato mixture thoroughly, then fill the skins.
  5. 5 Brush the tops with melted butter and brown in the oven before serving.
