Baked Turbot With Cheese Sauce

Ingredients

  • 1 quart milk
  • 1 onion
  • 1 bunch parsley
  • 1 bunch thyme
  • 1/4 cup flour
  • Salt and pepper to taste
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 pound fresh butter
  • 2 egg yolks
  • 2 tablespoons grated Gruyere cheese
  • 2.5 pounds boiled turbot, flaked
  • Breadcrumbs for topping

Method

  1. 1 Boil milk with onion, parsley, and thyme for 20 minutes. Remove herbs.
  2. 2 Whisk flour into a little cold milk, then gradually stir into the hot milk with salt, pepper, and nutmeg. Cook until thickened.
  3. 3 Remove from heat. Stir in butter, egg yolks, and 2 tablespoons Gruyere. Strain through a sieve.
  4. 4 Layer sauce and flaked turbot in a dish. Top with remaining sauce, breadcrumbs, and cheese.
  5. 5 Bake at 350°F for 30 minutes until browned and bubbly. Serve hot.
