Baked Turbot With Cheese Sauce
Ingredients
- 1 quart milk
- 1 onion
- 1 bunch parsley
- 1 bunch thyme
- 1/4 cup flour
- Salt and pepper to taste
- 1/4 teaspoon freshly grated nutmeg
- 1/4 pound fresh butter
- 2 egg yolks
- 2 tablespoons grated Gruyere cheese
- 2.5 pounds boiled turbot, flaked
- Breadcrumbs for topping
Method
- 1 Boil milk with onion, parsley, and thyme for 20 minutes. Remove herbs.
- 2 Whisk flour into a little cold milk, then gradually stir into the hot milk with salt, pepper, and nutmeg. Cook until thickened.
- 3 Remove from heat. Stir in butter, egg yolks, and 2 tablespoons Gruyere. Strain through a sieve.
- 4 Layer sauce and flaked turbot in a dish. Top with remaining sauce, breadcrumbs, and cheese.
- 5 Bake at 350°F for 30 minutes until browned and bubbly. Serve hot.
