Baked Tuna Pasta Casserole

Ingredients

  • 12 ounces pasta shells
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 tablespoon oil
  • 1 can (10.75 ounces) cream of mushroom soup
  • 1 can (14.5 ounces) low-sodium diced tomatoes
  • 2 cans (5 ounces each) water-packed tuna
  • shredded cheese, optional
  • chopped parsley, optional

Method

  1. 1 Cook pasta according to package directions and drain.
  2. 2 In a large skillet, cook onion and green pepper in oil until tender.
  3. 3 Stir in cream of mushroom soup, diced tomatoes, and tuna.
  4. 4 Combine the mixture with the drained pasta and transfer to a baking dish.
  5. 5 Bake at 350°F for 25 minutes until bubbly.
  6. 6 Top with cheese and parsley, then return to oven for 5 minutes to melt.
