Baked Tuna Pasta Casserole
Ingredients
- 12 ounces pasta shells
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1/2 tablespoon oil
- 1 can (10.75 ounces) cream of mushroom soup
- 1 can (14.5 ounces) low-sodium diced tomatoes
- 2 cans (5 ounces each) water-packed tuna
- shredded cheese, optional
- chopped parsley, optional
Method
- 1 Cook pasta according to package directions and drain.
- 2 In a large skillet, cook onion and green pepper in oil until tender.
- 3 Stir in cream of mushroom soup, diced tomatoes, and tuna.
- 4 Combine the mixture with the drained pasta and transfer to a baking dish.
- 5 Bake at 350°F for 25 minutes until bubbly.
- 6 Top with cheese and parsley, then return to oven for 5 minutes to melt.
