Baked Trout With Lime And Tomato
Ingredients
- 2 pounds trout fillets (or other fish, cut into six pieces)
- 3 tablespoons lime juice (or about 2 limes)
- 1 medium tomato, chopped
- 1/2 medium onion, chopped
- 3 tablespoons chopped cilantro
- 1/2 teaspoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper (optional)
Method
- 1 Preheat oven to 350°F.
- 2 Rinse fish and pat dry. Place in a baking dish.
- 3 In a separate dish, mix lime juice, tomato, onion, cilantro, olive oil, black pepper, salt, and red pepper. Pour over fish.
- 4 Bake for 15 to 20 minutes or until fork-tender.
