Baked Trout With Lime And Tomato

Ingredients

  • 2 pounds trout fillets (or other fish, cut into six pieces)
  • 3 tablespoons lime juice (or about 2 limes)
  • 1 medium tomato, chopped
  • 1/2 medium onion, chopped
  • 3 tablespoons chopped cilantro
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper (optional)

Method

  1. 1 Preheat oven to 350°F.
  2. 2 Rinse fish and pat dry. Place in a baking dish.
  3. 3 In a separate dish, mix lime juice, tomato, onion, cilantro, olive oil, black pepper, salt, and red pepper. Pour over fish.
  4. 4 Bake for 15 to 20 minutes or until fork-tender.
