  • 1/4 cup butter
  • strong spices
  • 2 egg yolks, well beaten
  • grated cheese
  • fine breadcrumbs

Method

  1. 1 Place trout in a pan with butter and spices. Heat slowly in an open oven until butter melts.
  2. 2 Drop beaten egg yolks onto the trout.
  3. 3 Grate cheese over the trout and cover with breadcrumbs.
  4. 4 Brown lightly in a hot oven (425°F) and serve.
