Baked Tomatoes Stuffed With Chopped Pork Sausage
Ingredients
- 5 large tomatoes
- 1 tablespoon minced green sweet peppers
- 1 tablespoon minced onion
- 3 or 4 pork sausages
- 2 cups bread crumbs
- 1 teaspoon minced parsley
- Salt and pepper
- 1 tablespoon melted butter
Method
- 1 Boil sausages for 10 minutes, then skin and chop them fine.
- 2 Hollow out tomatoes, removing about ½ cup of the solid flesh and chopping it fine.
- 3 Mix chopped sausage, tomato flesh, peppers, onion, bread crumbs, parsley, salt, and pepper thoroughly.
- 4 Heap the mixture into the tomato shells and place in a baking pan with melted butter.
- 5 Bake in a hot oven (425°F) for about 20 minutes.
