Baked Tomatoes Stuffed With Chopped Pork Sausage

Ingredients

  • 5 large tomatoes
  • 1 tablespoon minced green sweet peppers
  • 1 tablespoon minced onion
  • 3 or 4 pork sausages
  • 2 cups bread crumbs
  • 1 teaspoon minced parsley
  • Salt and pepper
  • 1 tablespoon melted butter

Method

  1. 1 Boil sausages for 10 minutes, then skin and chop them fine.
  2. 2 Hollow out tomatoes, removing about ½ cup of the solid flesh and chopping it fine.
  3. 3 Mix chopped sausage, tomato flesh, peppers, onion, bread crumbs, parsley, salt, and pepper thoroughly.
  4. 4 Heap the mixture into the tomato shells and place in a baking pan with melted butter.
  5. 5 Bake in a hot oven (425°F) for about 20 minutes.
