Baked Tomatoes Over Rice

Ingredients

  • 1/4 lb rice
  • 1/2 pint water
  • 1/4 oz butter
  • pepper and salt to taste
  • 1 large tomato or 2 small ones

Method

  1. 1 Combine rice, water, butter, salt, and pepper in a pot. Simmer over heat until water is absorbed and rice is tender, about 20 minutes.
  2. 2 Place tomatoes in a small baking dish. Season with salt and pepper, add a small piece of butter to each tomato, and a few spoonfuls of water.
  3. 3 Bake tomatoes for 15 to 25 minutes until soft.
  4. 4 Spread the cooked rice on a serving dish. Place the baked tomatoes in the center and pour the pan juices over everything. Serve immediately.
