Baked Tomato Egg Casserole

Ingredients

  • 4 fresh tomatoes
  • 2 eggs
  • 2 teaspoons flour
  • 1/2 pint milk
  • 1 ounce butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Method

  1. 1 Scald and peel the tomatoes, then cut each into two halves.
  2. 2 Place tomato halves cut-side up in a greased baking tin. Sprinkle with salt and pepper, and place a small knob of butter on each half.
  3. 3 Whisk eggs, flour, milk, and remaining butter to make a batter. Pour over tomatoes.
  4. 4 Bake in a hot oven (425°F) for 30 minutes.
