Baked Tomato Egg Casserole
Ingredients
- 4 fresh tomatoes
- 2 eggs
- 2 teaspoons flour
- 1/2 pint milk
- 1 ounce butter
- 1 teaspoon salt
- 1/2 teaspoon pepper
Method
- 1 Scald and peel the tomatoes, then cut each into two halves.
- 2 Place tomato halves cut-side up in a greased baking tin. Sprinkle with salt and pepper, and place a small knob of butter on each half.
- 3 Whisk eggs, flour, milk, and remaining butter to make a batter. Pour over tomatoes.
- 4 Bake in a hot oven (425°F) for 30 minutes.
