Baked Tomato And Potato Cups
Ingredients
- 1 pint mashed potatoes
- 1 oz butter
- 4 tomatoes
- Pepper and salt to taste
- 1 tablespoon finely chopped parsley
Method
- 1 Mix butter into mashed potatoes and season with pepper and salt.
- 2 Butter 8 patty pans and line them with a thick layer of the potato mixture.
- 3 Place half a tomato in each pan, adding a little parsley and a dusting of pepper and salt.
- 4 Cover with mashed potatoes and brown in the oven.
