Baked Tomato and Breadcrumb Toast
Ingredients
- 1 or 2 ripe red tomatoes
- Fine breadcrumbs
- Pepper
- Salt
- Butter
- Hot buttered toast
- Lemon juice
Method
- 1 Slice tomatoes and remove seeds.
- 2 Arrange slices in a baking tin. Sprinkle with seasoned breadcrumbs and top with butter.
- 3 Bake for 15 minutes.
- 4 Serve on hot buttered toast. Pour pan juices around the dish and add a few drops of lemon juice.
