Baked Tomato And Breadcrumb Casserole
Ingredients
- 8 breakfastcupfuls Allinson breadcrumbs
- 3 eggs
- 2 lbs tomatoes
- 2 finely chopped onions
- 1 1/2 oz butter
- pepper and salt to taste
- boiling milk
- 2 tsp finely chopped parsley
Method
- 1 Slice tomatoes and stew gently with 1 oz butter, onions, and seasoning for 10 minutes. Stir in parsley.
- 2 Soak breadcrumbs with enough hot milk to moisten. Beat in eggs and mix well.
- 3 Grease a pie dish. Layer breadcrumbs, tomato mixture, and remaining breadcrumbs, finishing with breadcrumbs.
- 4 Dot top with remaining butter bits. Bake until lightly browned.
