Baked Tomato And Breadcrumb Casserole

Ingredients

  • 8 breakfastcupfuls Allinson breadcrumbs
  • 3 eggs
  • 2 lbs tomatoes
  • 2 finely chopped onions
  • 1 1/2 oz butter
  • pepper and salt to taste
  • boiling milk
  • 2 tsp finely chopped parsley

Method

  1. 1 Slice tomatoes and stew gently with 1 oz butter, onions, and seasoning for 10 minutes. Stir in parsley.
  2. 2 Soak breadcrumbs with enough hot milk to moisten. Beat in eggs and mix well.
  3. 3 Grease a pie dish. Layer breadcrumbs, tomato mixture, and remaining breadcrumbs, finishing with breadcrumbs.
  4. 4 Dot top with remaining butter bits. Bake until lightly browned.
