Baked Tapioca Stuffed Apples
Ingredients
- 6 tart cooking apples
- 3/4 cup pearl tapioca
- 1 quart water
- Sugar to taste
- Lemon rind (optional)
- Small bits of butter
Method
- 1 Soak tapioca in water for two hours.
- 2 Cook tapioca in a double boiler until clear.
- 3 Sweeten to taste and add lemon rind if using; remove rind when done.
- 4 Peel and core apples, filling holes with sugar.
- 5 Arrange apples in a pudding dish and pour tapioca over them.
- 6 Add small bits of butter on top and bake until apples are tender.
- 7 Serve hot or cold with cream and sugar.
