Baked Tapioca Stuffed Apples

Ingredients

  • 6 tart cooking apples
  • 3/4 cup pearl tapioca
  • 1 quart water
  • Sugar to taste
  • Lemon rind (optional)
  • Small bits of butter

Method

  1. 1 Soak tapioca in water for two hours.
  2. 2 Cook tapioca in a double boiler until clear.
  3. 3 Sweeten to taste and add lemon rind if using; remove rind when done.
  4. 4 Peel and core apples, filling holes with sugar.
  5. 5 Arrange apples in a pudding dish and pour tapioca over them.
  6. 6 Add small bits of butter on top and bake until apples are tender.
  7. 7 Serve hot or cold with cream and sugar.
