Baked Tapioca Pudding With Meringue

Ingredients

  • 4 tbsp tapioca
  • 1 quart milk
  • 4 eggs
  • 3 tbsp sugar
  • 1/2 cup powdered sugar

Method

  1. 1 Soak tapioca in enough water to cover for several hours or overnight.
  2. 2 Bring milk to a boil and pour over the soaked tapioca. Let cool until blood-warm.
  3. 3 Stir in 3 tbsp sugar and 4 well-beaten eggs.
  4. 4 Bake for about 1 hour in a moderate oven (350°F).
  5. 5 Remove from oven. When slightly cooled, spread with 2 whipped egg whites and 1/2 cup powdered sugar.
  6. 6 Return to top shelf for 2 minutes or until frosting is browned.
