Baked Tapioca Pudding With Meringue
Ingredients
- 4 tbsp tapioca
- 1 quart milk
- 4 eggs
- 3 tbsp sugar
- 1/2 cup powdered sugar
Method
- 1 Soak tapioca in enough water to cover for several hours or overnight.
- 2 Bring milk to a boil and pour over the soaked tapioca. Let cool until blood-warm.
- 3 Stir in 3 tbsp sugar and 4 well-beaten eggs.
- 4 Bake for about 1 hour in a moderate oven (350°F).
- 5 Remove from oven. When slightly cooled, spread with 2 whipped egg whites and 1/2 cup powdered sugar.
- 6 Return to top shelf for 2 minutes or until frosting is browned.
