Baked Tapioca Pudding With Apples

Ingredients

  • 1 quart water or milk
  • 4 tablespoons tapioca
  • 4 tablespoons sugar
  • 1 lb apples
  • Grated rind of 1 lemon

Method

  1. 1 Soak the tapioca in cold water.
  2. 2 Simmer the tapioca in the milk and water with the sugar for thirty minutes.
  3. 3 Add the peeled, cored, and sliced apples and the grated lemon rind.
  4. 4 Pour the mixture into a pie dish and bake in a moderate oven (350°F) for about one hour.
