Baked Tapioca Pudding With Apples
Ingredients
- 1 quart water or milk
- 4 tablespoons tapioca
- 4 tablespoons sugar
- 1 lb apples
- Grated rind of 1 lemon
Method
- 1 Soak the tapioca in cold water.
- 2 Simmer the tapioca in the milk and water with the sugar for thirty minutes.
- 3 Add the peeled, cored, and sliced apples and the grated lemon rind.
- 4 Pour the mixture into a pie dish and bake in a moderate oven (350°F) for about one hour.
