Baked Tapioca And Rice Pudding
Ingredients
- 1/2 cup tapioca
- 3/4 cup whole rice
- 1 quart milk
- 3 eggs
- sugar to taste
- grated lemon peel
Method
- 1 Soak tapioca and rice in just enough water to cover them overnight.
- 2 Drain and add milk to the soaked grains. Simmer over low heat, stirring every five minutes until the mixture becomes clear.
- 3 Remove from heat and let cool completely.
- 4 Stir in beaten eggs, sugar, and grated lemon peel.
- 5 Bake in a moderate oven (350°F) until set. Serve hot or cold.
