Baked Sweet Potato Skins With Sherry

Ingredients

  • 6 medium sweet potatoes
  • 2 tbsp butter
  • Salt to taste
  • Sherry wine to taste

Method

  1. 1 Bake sweet potatoes until tender, then remove from oven and cut in halves lengthwise.
  2. 2 Scoop out the inside flesh and mash it with butter until creamy.
  3. 3 Season the mashed potatoes with salt and a splash of Sherry wine.
  4. 4 Refill the potato skins with the mixture and bake in a 425°F oven for 5 minutes.
