Baked Sweet Potato Skins With Sherry
Ingredients
- 6 medium sweet potatoes
- 2 tbsp butter
- Salt to taste
- Sherry wine to taste
Method
- 1 Bake sweet potatoes until tender, then remove from oven and cut in halves lengthwise.
- 2 Scoop out the inside flesh and mash it with butter until creamy.
- 3 Season the mashed potatoes with salt and a splash of Sherry wine.
- 4 Refill the potato skins with the mixture and bake in a 425°F oven for 5 minutes.
