Baked Sweet Potato Pone With Molasses And Ginger

Ingredients

  • 5 cups grated raw sweet potatoes
  • 3 cups West Indian molasses
  • 2 cups butter
  • 1 cup preserved ginger, cut fine
  • 1 cup candied orange peel, cut fine
  • 2 tablespoons mixed spices (cinnamon, nutmeg, cloves)
  • 1 tablespoon ground ginger
  • 1 scant teaspoon salt

Method

  1. 1 Peel and grate enough raw sweet potatoes to make 5 cups.
  2. 2 Add molasses, butter, preserved ginger, candied orange peel, mixed spices, ground ginger, and salt.
  3. 3 Mix all ingredients well together.
  4. 4 Turn the mixture into a deep buttered earthen dish.
  5. 5 Bake in a moderate oven (350°F) for 2 to 3 hours, depending on thickness.
  6. 6 Check for doneness by inserting a knife blade to the bottom; it should come out clean.
  7. 7 Serve hot, cutting into thick slices. Can be reheated 2 or 3 times if necessary.
