Baked Sweet Potato Pone With Molasses And Ginger
Ingredients
- 5 cups grated raw sweet potatoes
- 3 cups West Indian molasses
- 2 cups butter
- 1 cup preserved ginger, cut fine
- 1 cup candied orange peel, cut fine
- 2 tablespoons mixed spices (cinnamon, nutmeg, cloves)
- 1 tablespoon ground ginger
- 1 scant teaspoon salt
Method
- 1 Peel and grate enough raw sweet potatoes to make 5 cups.
- 2 Add molasses, butter, preserved ginger, candied orange peel, mixed spices, ground ginger, and salt.
- 3 Mix all ingredients well together.
- 4 Turn the mixture into a deep buttered earthen dish.
- 5 Bake in a moderate oven (350°F) for 2 to 3 hours, depending on thickness.
- 6 Check for doneness by inserting a knife blade to the bottom; it should come out clean.
- 7 Serve hot, cutting into thick slices. Can be reheated 2 or 3 times if necessary.
