Baked Sweet Potato Custard
Ingredients
- 1 lb sweet potatoes
- ½ lb butter
- 6 eggs
- ½ lb loaf sugar
- Pinch of mace or nutmeg
Method
- 1 Boil the sweet potatoes until tender, then peel and mash or strain them while warm.
- 2 Beat the eggs with the sugar until combined.
- 3 Mix the mashed potatoes, butter, and egg mixture together. Add mace or nutmeg to taste.
- 4 Pour into a baking dish and bake in a moderate oven (350°F) until set and golden.
