Baked Sweet Potato Custard

Ingredients

  • 1 lb sweet potatoes
  • ½ lb butter
  • 6 eggs
  • ½ lb loaf sugar
  • Pinch of mace or nutmeg

Method

  1. 1 Boil the sweet potatoes until tender, then peel and mash or strain them while warm.
  2. 2 Beat the eggs with the sugar until combined.
  3. 3 Mix the mashed potatoes, butter, and egg mixture together. Add mace or nutmeg to taste.
  4. 4 Pour into a baking dish and bake in a moderate oven (350°F) until set and golden.
