Baked Sweet Potato Casserole
Ingredients
- 1/2 lb sweet potatoes (approx. 1/4 peck)
- 1/2 tsp nutmeg
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp butter
- 1 tbsp butter
- Additional nutmeg for topping
- Flour for greasing pan
Method
- 1 Boil sweet potatoes until tender, then cool, peel, and mash them.
- 2 Mix mashed potatoes with 1/2 tsp nutmeg, salt, pepper, and 2 tbsp butter.
- 3 Grease and flour a baking pan, then spread the mixture evenly about 1 inch thick.
- 4 Sprinkle top with nutmeg and dot with 1 tbsp butter.
- 5 Bake in a moderate oven (350°F) for 25 minutes.
- 6 Let stand 5 minutes, then cut into squares and serve.
