Baked Sweet Potato And Banana Custard
Ingredients
- 1/2 cup cooked, mashed sweet potato
- 1 cup mashed banana
- 1 cup fat-free evaporated milk
- 2 tablespoons packed brown sugar
- 2 egg yolks, beaten (or 1/3 cup egg substitute)
- 1/2 teaspoon salt
- 1/4 cup raisins
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
- Non-stick cooking spray
Method
- 1 Preheat oven to 325°F. In a medium bowl, stir together sweet potato and banana. Add milk, blending well.
- 2 Add brown sugar, egg yolks, and salt to the mixture, mixing thoroughly.
- 3 Spray a casserole dish with non-stick cooking spray. Transfer the sweet potato mixture into the dish.
- 4 Bake in the preheated oven for 35 minutes.
- 5 Remove from oven. Combine raisins, sugar, and cinnamon; sprinkle over the top of the custard.
- 6 Return to oven and bake for 10 more minutes.
