Baked Sweet Potato And Banana Custard

  • 1/2 cup cooked, mashed sweet potato
  • 1 cup mashed banana
  • 1 cup fat-free evaporated milk
  • 2 tablespoons packed brown sugar
  • 2 egg yolks, beaten (or 1/3 cup egg substitute)
  • 1/2 teaspoon salt
  • 1/4 cup raisins
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
  • Non-stick cooking spray

Method

  1. 1 Preheat oven to 325°F. In a medium bowl, stir together sweet potato and banana. Add milk, blending well.
  2. 2 Add brown sugar, egg yolks, and salt to the mixture, mixing thoroughly.
  3. 3 Spray a casserole dish with non-stick cooking spray. Transfer the sweet potato mixture into the dish.
  4. 4 Bake in the preheated oven for 35 minutes.
  5. 5 Remove from oven. Combine raisins, sugar, and cinnamon; sprinkle over the top of the custard.
  6. 6 Return to oven and bake for 10 more minutes.
