Baked Sturgeon Au Gratin

Ingredients

  • 3 pounds sturgeon or solid white fish, boiled until tender
  • salt and pepper to taste
  • 2 tablespoons wine
  • 1 tablespoon lemon juice
  • 1 quart milk
  • 2 large onions, sliced
  • 1/2 pound butter, softened
  • 2 tablespoons flour
  • 1 lemon (zest and juice)
  • 1 cup wine
  • 1 loaf white bread, crusts removed and crumbled

Method

  1. 1 Boil fish until tender, remove bones, and mince finely. Season with salt, pepper, 2 tablespoons wine, and lemon juice.
  2. 2 Simmer milk and onions until onions are shredded. Strain milk, reserving liquid. Discard onions.
  3. 3 Whisk butter and flour into a paste. Stir into hot milk and return to pan. Boil, stirring constantly, until thickened and smooth.
  4. 4 Stir lemon zest, lemon juice, and 1 cup wine into the sauce. Fold in the minced fish.
  5. 5 Layer fish mixture and bread crumbs in a hot baking dish, topping with crumbs. Bake at 425°F for 5-10 minutes until golden.
