Baked Stuffed Tomatoes With Meat And Bread Crumbs
Ingredients
- 8 large firm tomatoes
- 1 tbsp butter
- 1 tbsp onion, chopped fine
- 3/4 cup minced meat, chicken, or livers
- 1 tbsp chopped parsley
- 1 cup bread crumbs
- Pulp from the tomatoes
- 1 tsp salt
- 1/4 tsp pepper
- 1 egg (optional)
- Slices of bread, 1/2 inch thick
- Water for dipping bread
- Additional butter for topping
- Brown sauce (optional)
Method
- 1 Cut a small slice off the stem end of tomatoes and scoop out the inside without removing skins. Reserve the pulp.
- 2 Melt butter in a saucepan, add chopped onion, and let it color slightly. Add minced meat, parsley, bread crumbs, tomato pulp, salt, pepper, and egg if using. Stir until consistent.
- 3 Dust tomato insides with salt and pepper. Fill with stuffing, letting it rise half an inch above the rim. Top each with a piece of butter.
- 4 Cut bread into circles the size of tomatoes. Dip quickly in water and place in a baking pan. Set a stuffed tomato on each bread circle.
- 5 Bake in a moderate oven (350°F) for about 15 minutes, or until the stuffing is browned. Serve with brown sauce if desired.
