Baked Stuffed Tomatoes With Meat And Bread Crumbs

Ingredients

  • 8 large firm tomatoes
  • 1 tbsp butter
  • 1 tbsp onion, chopped fine
  • 3/4 cup minced meat, chicken, or livers
  • 1 tbsp chopped parsley
  • 1 cup bread crumbs
  • Pulp from the tomatoes
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 egg (optional)
  • Slices of bread, 1/2 inch thick
  • Water for dipping bread
  • Additional butter for topping
  • Brown sauce (optional)

Method

  1. 1 Cut a small slice off the stem end of tomatoes and scoop out the inside without removing skins. Reserve the pulp.
  2. 2 Melt butter in a saucepan, add chopped onion, and let it color slightly. Add minced meat, parsley, bread crumbs, tomato pulp, salt, pepper, and egg if using. Stir until consistent.
  3. 3 Dust tomato insides with salt and pepper. Fill with stuffing, letting it rise half an inch above the rim. Top each with a piece of butter.
  4. 4 Cut bread into circles the size of tomatoes. Dip quickly in water and place in a baking pan. Set a stuffed tomato on each bread circle.
  5. 5 Bake in a moderate oven (350°F) for about 15 minutes, or until the stuffing is browned. Serve with brown sauce if desired.
