Baked Stuffed Tomatoes With Herbs
Ingredients
- 8 medium tomatoes
- 3/4 cup breadcrumbs
- 1 tsp finely chopped parsley
- 1 tsp finely chopped mint
- 1 tsp finely chopped eschalot
- 1 egg, well beaten
- Salt and pepper to taste
- 1 oz butter
Method
- 1 Mix breadcrumbs, parsley, mint, eschalot, beaten egg, salt, and pepper to create the stuffing.
- 2 Make a small opening in each tomato and remove the seeds with a teaspoon.
- 3 Fill the tomatoes with the stuffing and place them in a baking tin.
- 4 Place a small piece of butter on each tomato and pour 1/4 cup water into the tin.
- 5 Bake at 350°F for 15 minutes.
