Baked Stuffed Tomatoes With Herbs

Ingredients

  • 8 medium tomatoes
  • 3/4 cup breadcrumbs
  • 1 tsp finely chopped parsley
  • 1 tsp finely chopped mint
  • 1 tsp finely chopped eschalot
  • 1 egg, well beaten
  • Salt and pepper to taste
  • 1 oz butter

Method

  1. 1 Mix breadcrumbs, parsley, mint, eschalot, beaten egg, salt, and pepper to create the stuffing.
  2. 2 Make a small opening in each tomato and remove the seeds with a teaspoon.
  3. 3 Fill the tomatoes with the stuffing and place them in a baking tin.
  4. 4 Place a small piece of butter on each tomato and pour 1/4 cup water into the tin.
  5. 5 Bake at 350°F for 15 minutes.
