Baked Stuffed Tomatoes With Herbed Bread Crumbs
Ingredients
- 3 small onions
- 1 large tomato
- 2 cups unseasoned bread crumbs
- 2 teaspoons dried parsley
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1 tablespoon garlic powder
- 1/4 cup vegetable oil
- water, as needed
Method
- 1 Preheat oven to 400°F. Peel and finely chop the onion.
- 2 Cut the tomato in half. Remove the stem and gently squeeze out the seeds.
- 3 In a bowl, combine bread crumbs, chopped onion, parsley, basil, pepper, garlic powder, and oil.
- 4 Slowly add water to the crumb mixture until moistened, then press the mixture into the tomato halves.
- 5 Place tomatoes cut-side up on an oiled baking pan. Bake for 15-20 minutes until crumbs are browned and tomatoes are soft.
