Baked Stuffed Tomatoes With Ham And Cheese
Ingredients
- 6-8 ripe tomatoes
- 1 oz butter
- 1 oz flour
- ¼ cup stock or milk
- 2 tsp chopped parsley
- 2 tsp chopped cooked ham
- 2 tsp grated Parmesan cheese
- A few button mushrooms, chopped
- A few drops of lemon juice
- White and browned bread-crumbs
- Pepper and salt
Method
- 1 Melt butter in a stewpan, mix in flour, then add stock or milk. Stir and cook until thick.
- 2 Mix in enough bread-crumbs to make the mixture stiff. Stir in parsley, mushrooms, cheese, ham, lemon juice, pepper, and salt.
- 3 Scoop out the tops of the tomatoes. Pile the stuffing mixture into each tomato and sprinkle with browned bread-crumbs.
- 4 Place on a greased baking sheet and bake in a moderate oven (350°F) for about 15 minutes.
