Baked Stuffed Tomatoes With Ham And Cheese

Ingredients

  • 6-8 ripe tomatoes
  • 1 oz butter
  • 1 oz flour
  • ¼ cup stock or milk
  • 2 tsp chopped parsley
  • 2 tsp chopped cooked ham
  • 2 tsp grated Parmesan cheese
  • A few button mushrooms, chopped
  • A few drops of lemon juice
  • White and browned bread-crumbs
  • Pepper and salt

Method

  1. 1 Melt butter in a stewpan, mix in flour, then add stock or milk. Stir and cook until thick.
  2. 2 Mix in enough bread-crumbs to make the mixture stiff. Stir in parsley, mushrooms, cheese, ham, lemon juice, pepper, and salt.
  3. 3 Scoop out the tops of the tomatoes. Pile the stuffing mixture into each tomato and sprinkle with browned bread-crumbs.
  4. 4 Place on a greased baking sheet and bake in a moderate oven (350°F) for about 15 minutes.
