Baked Stuffed Spanish Onions With Meat

  • minced chicken or meat
  • soft bread crumbs
  • salt
  • pepper
  • melted butter

Method

  1. 1 Peel onions, scoop out the center, parboil for 5 minutes, and drain upside down.
  2. 2 Mix minced chicken or meat with soft bread crumbs, finely chopped onion center, salt, pepper, and melted butter.
  3. 3 Fill onions heaping with mixture, sprinkle tops with crumbs, place in a pan with an inch of water.
  4. 4 Cover and bake in a moderate oven (350°F) for 1 hour until tender but holding shape.
  5. 5 Remove cover for the last 5 minutes to lightly brown the tops.
