Baked Stuffed Smelt With Hollandaise Sauce
Ingredients
- 1/4 cup melted butter
- 1 cup bread crumbs
- 1 teaspoon chopped onion
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- fresh herbs
- smelt (boned)
- 1/2 cup butter
- 3 egg yolks
- juice of 1/2 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup boiling water
Method
- 1 Mix 1/4 cup melted butter, bread crumbs, chopped onion, salt, pepper, and herbs to create the stuffing.
- 2 Stuff the boned smelt with the mixture and sew the openings closed.
- 3 Roll the stuffed smelt in melted butter and fine bread crumbs.
- 4 Bake in a moderate oven (350°F) for about 15 minutes.
- 5 For the sauce, beat 1/2 cup butter until creamy, then gradually beat in egg yolks.
- 6 Add lemon juice, salt, pepper, and boiling water; cook over boiling water until thickened.
