Baked Stuffed Smelt With Hollandaise Sauce

  • 1/4 cup melted butter
  • 1 cup bread crumbs
  • 1 teaspoon chopped onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

  • smelt (boned)
  • 1/2 cup butter
  • 3 egg yolks
  • juice of 1/2 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup boiling water

Method

  1. 1 Mix 1/4 cup melted butter, bread crumbs, chopped onion, salt, pepper, and herbs to create the stuffing.
  2. 2 Stuff the boned smelt with the mixture and sew the openings closed.
  3. 3 Roll the stuffed smelt in melted butter and fine bread crumbs.
  4. 4 Bake in a moderate oven (350°F) for about 15 minutes.
  5. 5 For the sauce, beat 1/2 cup butter until creamy, then gradually beat in egg yolks.
  6. 6 Add lemon juice, salt, pepper, and boiling water; cook over boiling water until thickened.
