Baked Stuffed Shad With Mushroom Sauce

Ingredients

  • 1 shad (4 lbs)
  • 1/4 lb mushrooms
  • 1/2 cup Crisco
  • 2 tbsp chopped parsley
  • 2 tbsp chopped chives
  • 1 cup breadcrumbs
  • 1 egg, well beaten
  • Salt and white pepper
  • Thin strips of salt pork
  • 1 cup cream
  • 1 tsp cornstarch

Method

  1. 1 Clean, wipe, and dry the shad.
  2. 2 Melt Crisco in a pan. Add breadcrumbs, chopped mushrooms, parsley, chives, beaten egg, salt, and pepper. Mix well.
  3. 3 Stuff the fish with the forcemeat. Place in a greased pan and cover with strips of salt pork.
  4. 4 Bake in a hot oven (425°F) for 40 minutes. Transfer fish to a hot platter.
  5. 5 Pour cream into the baking pan, add cornstarch, and stir until boiling. Serve sauce with the fish.
