Baked Stuffed Shad With Mushroom Sauce
Ingredients
- 1 shad (4 lbs)
- 1/4 lb mushrooms
- 1/2 cup Crisco
- 2 tbsp chopped parsley
- 2 tbsp chopped chives
- 1 cup breadcrumbs
- 1 egg, well beaten
- Salt and white pepper
- Thin strips of salt pork
- 1 cup cream
- 1 tsp cornstarch
Method
- 1 Clean, wipe, and dry the shad.
- 2 Melt Crisco in a pan. Add breadcrumbs, chopped mushrooms, parsley, chives, beaten egg, salt, and pepper. Mix well.
- 3 Stuff the fish with the forcemeat. Place in a greased pan and cover with strips of salt pork.
- 4 Bake in a hot oven (425°F) for 40 minutes. Transfer fish to a hot platter.
- 5 Pour cream into the baking pan, add cornstarch, and stir until boiling. Serve sauce with the fish.
