Baked Stuffed Shad With Herbed Breadcrumbs

Ingredients

  • 2.5 lb shad, cleaned and prepared
  • 1 cup breadcrumbs
  • 2 onions, chopped fine
  • 2 tablespoons finely chopped parsley
  • 1.5 teaspoons salt
  • 1 teaspoon pepper
  • 0.5 teaspoon thyme
  • 1 egg
  • 2 tablespoons salad oil
  • 1 cup boiling water
  • flour for coating
  • stout string and darning needle

Method

  1. 1 Mix breadcrumbs, chopped onions, parsley, salt, pepper, thyme, egg, and salad oil in a bowl.
  2. 2 Stuff the mixture into the shad and sew the opening closed with a stout string and darning needle.
  3. 3 Pat flour onto the fish and place it in a baking pan.
  4. 4 Bake in a hot oven (425°F) for one hour, basting every 15 minutes with 1 cup of boiling water.
