Baked Stuffed Shad With Herbed Breadcrumbs
Ingredients
- 2.5 lb shad, cleaned and prepared
- 1 cup breadcrumbs
- 2 onions, chopped fine
- 2 tablespoons finely chopped parsley
- 1.5 teaspoons salt
- 1 teaspoon pepper
- 0.5 teaspoon thyme
- 1 egg
- 2 tablespoons salad oil
- 1 cup boiling water
- flour for coating
- stout string and darning needle
Method
- 1 Mix breadcrumbs, chopped onions, parsley, salt, pepper, thyme, egg, and salad oil in a bowl.
- 2 Stuff the mixture into the shad and sew the opening closed with a stout string and darning needle.
- 3 Pat flour onto the fish and place it in a baking pan.
- 4 Bake in a hot oven (425°F) for one hour, basting every 15 minutes with 1 cup of boiling water.
