Baked Stuffed Rock Fish
Ingredients
- 1 rock fish
- salt
- black pepper
- cayenne pepper
- bread stuffing
- butter
- parsley
- thyme
- 1 egg
- water
- flour
- butter for basting
Method
- 1 Rub the fish inside and out with salt, black pepper, and a dust of cayenne.
- 2 Prepare a stuffing of bread, butter, pepper, salt, parsley, and thyme. Mix in an egg.
- 3 Fill the fish with the stuffing and sew it up or tie a string around it.
- 4 Place the fish in a deep pan with half a pint of water. Dust with flour and baste with butter.
- 5 Bake in a moderate oven (350°F) for 1.5 hours for a large fish, or 30 minutes for small ones.
