  • salt
  • black pepper
  • cayenne pepper
  • bread stuffing

  • 1 egg
  • water

Method

  1. 1 Rub the fish inside and out with salt, black pepper, and a dust of cayenne.
  2. 2 Prepare a stuffing of bread, butter, pepper, salt, parsley, and thyme. Mix in an egg.
  3. 3 Fill the fish with the stuffing and sew it up or tie a string around it.
  4. 4 Place the fish in a deep pan with half a pint of water. Dust with flour and baste with butter.
  5. 5 Bake in a moderate oven (350°F) for 1.5 hours for a large fish, or 30 minutes for small ones.
