Baked Stuffed Potato Skins

Ingredients

  • 3 large potatoes
  • ½ oz butter
  • 2 oz mashed potato
  • 1 tsp grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp milk
  • 1 egg, separated

Method

  1. 1 Bake the potatoes until tender. Cut them in half lengthwise and carefully scoop out the flesh, leaving the skins intact.
  2. 2 Melt the butter in a saucepan. Add the scooped potato flesh, Parmesan, milk, salt, and pepper. Stir until smooth.
  3. 3 Stir in the egg yolk. Gently fold in the well-beaten egg white until just combined.
  4. 4 Fill the potato skins with the mixture. Bake at 425°F for 10-12 minutes until the topping rises and puffs up.
