Baked Stuffed Potato Skins
Ingredients
- 3 large potatoes
- ½ oz butter
- 2 oz mashed potato
- 1 tsp grated Parmesan cheese
- Salt and pepper to taste
- 1 tbsp milk
- 1 egg, separated
Method
- 1 Bake the potatoes until tender. Cut them in half lengthwise and carefully scoop out the flesh, leaving the skins intact.
- 2 Melt the butter in a saucepan. Add the scooped potato flesh, Parmesan, milk, salt, and pepper. Stir until smooth.
- 3 Stir in the egg yolk. Gently fold in the well-beaten egg white until just combined.
- 4 Fill the potato skins with the mixture. Bake at 425°F for 10-12 minutes until the topping rises and puffs up.
