Baked Stuffed Peaches With Almonds
Ingredients
- 6 large peaches, halved and pitted
- 4-5 ladyfinger biscuits, crumbled
- 3 oz granulated sugar, divided
- 2 oz sweet almonds, skinned
- 3 peach kernels
- 0.5 oz candied angelica, diced
Method
- 1 Halve the peaches and remove the stones. Slightly enlarge the cavity where the stone was using a knife.
- 2 Mix the extracted peach pulp with the skinned almonds and peach kernels. Grind the mixture very fine with 2 ounces of sugar.
- 3 Add the crumbled ladyfingers and diced candied angelica to the almond mixture to create the stuffing.
- 4 Fill the peach cavities with the stuffing mixture. Arrange the peaches in a baking tin with the stuffing facing up.
- 5 Sprinkle the remaining 1 ounce of sugar over the peaches. Bake in a moderate oven (350°F) until tender.
