Baked Stuffed Oysters With Egg
Ingredients
- 1 pint oysters
- 2 hard-boiled eggs, chopped fine
- 2 tablespoons bread crumbs
- Salt to taste
- Red pepper to taste
- Lemon juice to taste
- Cream, as needed
- Butter, for coating shells
Method
- 1 Parboil oysters, then skim, drain, and cool them. Chop the oysters coarsely.
- 2 In a bowl, mix the chopped oysters with chopped hard-boiled eggs, bread crumbs, salt, red pepper, lemon juice, and enough cream to form a smooth paste.
- 3 Fill buttered oyster shells with the mixture. Cover with additional crumbs and dot with butter.
- 4 Bake in a hot oven (425°F) until browned and heated through.
