Baked Stuffed Oysters With Egg

Ingredients

  • 1 pint oysters
  • 2 hard-boiled eggs, chopped fine
  • 2 tablespoons bread crumbs
  • Salt to taste
  • Red pepper to taste
  • Lemon juice to taste
  • Cream, as needed
  • Butter, for coating shells

Method

  1. 1 Parboil oysters, then skim, drain, and cool them. Chop the oysters coarsely.
  2. 2 In a bowl, mix the chopped oysters with chopped hard-boiled eggs, bread crumbs, salt, red pepper, lemon juice, and enough cream to form a smooth paste.
  3. 3 Fill buttered oyster shells with the mixture. Cover with additional crumbs and dot with butter.
  4. 4 Bake in a hot oven (425°F) until browned and heated through.
