Baked Stuffed Mushrooms With Parmesan

Ingredients

  • 12 fresh mushrooms
  • 2 tablespoons butter
  • 6 mushroom stalks, chopped
  • 1/4 cup bread crumbs soaked in stock
  • 1 small clove garlic, minced
  • 1 tablespoon chopped parsley
  • 2 eggs
  • 1/8 cup cream
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Additional bread crumbs for topping

Method

  1. 1 Remove mushroom stalks. Place caps bottom-up in a pan with a little butter.
  2. 2 Chop stalks and mix with soaked bread crumbs, garlic, and parsley.
  3. 3 Combine mixture with eggs, cream, Parmesan, and salt to form a smooth paste.
  4. 4 Fill mushroom caps with the paste, top with crumbs, and bake at 350°F for 10-15 minutes.
