Baked Stuffed Mushrooms With Parmesan
Ingredients
- 12 fresh mushrooms
- 2 tablespoons butter
- 6 mushroom stalks, chopped
- 1/4 cup bread crumbs soaked in stock
- 1 small clove garlic, minced
- 1 tablespoon chopped parsley
- 2 eggs
- 1/8 cup cream
- 1/4 cup grated Parmesan cheese
- Salt to taste
- Additional bread crumbs for topping
Method
- 1 Remove mushroom stalks. Place caps bottom-up in a pan with a little butter.
- 2 Chop stalks and mix with soaked bread crumbs, garlic, and parsley.
- 3 Combine mixture with eggs, cream, Parmesan, and salt to form a smooth paste.
- 4 Fill mushroom caps with the paste, top with crumbs, and bake at 350°F for 10-15 minutes.
