Baked Stuffed Mushrooms With Mushroom Sauce

Ingredients

  • 1 tbsp butter
  • 1 tbsp flour
  • 2 cups chicken broth or white stock
  • 1 pint mushrooms, chopped stalks
  • 1 tbsp chopped parsley
  • salt and pepper to taste
  • additional butter for topping
  • breadcrumbs for sprinkling

Method

  1. 1 Make a roux by melting 1 tbsp butter and whisking in 1 tbsp flour.
  2. 2 Whisk in 2 cups chicken broth or white stock. Add chopped mushroom stalks.
  3. 3 Simmer until sauce reduces by half. Stir in parsley, salt, and pepper.
  4. 4 Pour sauce into a shallow baking dish. Arrange whole mushrooms gills-up.
  5. 5 Top each mushroom with a small piece of butter and sprinkle with breadcrumbs.
  6. 6 Bake at 350°F for 5-8 minutes until golden. Serve immediately in the dish.
