Baked Stuffed Mushrooms With Mushroom Sauce
Ingredients
- 1 tbsp butter
- 1 tbsp flour
- 2 cups chicken broth or white stock
- 1 pint mushrooms, chopped stalks
- 1 tbsp chopped parsley
- salt and pepper to taste
- additional butter for topping
- breadcrumbs for sprinkling
Method
- 1 Make a roux by melting 1 tbsp butter and whisking in 1 tbsp flour.
- 2 Whisk in 2 cups chicken broth or white stock. Add chopped mushroom stalks.
- 3 Simmer until sauce reduces by half. Stir in parsley, salt, and pepper.
- 4 Pour sauce into a shallow baking dish. Arrange whole mushrooms gills-up.
- 5 Top each mushroom with a small piece of butter and sprinkle with breadcrumbs.
- 6 Bake at 350°F for 5-8 minutes until golden. Serve immediately in the dish.
