Baked Stuffed Mushrooms On Toast
Ingredients
- 1 lb fresh mushrooms
- 1 tbsp butter
- 1/2 onion, sliced
- 1 tbsp flour
- 1 cup stock
- 1/2 cup bread crumbs
- salt and pepper to taste
- dash of cayenne
- toasted bread slices
Method
- 1 Remove mushroom stalks. Peel cups and soak in cold water with lemon juice to prevent discoloration. Chop and scrape stalks.
- 2 Sauté chopped stalks and sliced onion in butter for 10 minutes. Stir in flour and cook for 5 minutes.
- 3 Add stock, bread crumbs, salt, pepper, and cayenne. Simmer until thickened.
- 4 Fill mushroom cups with the mixture. Sprinkle with extra crumbs and place on toasted bread rounds.
- 5 Bake in a moderate oven (350°F) for 15 minutes.
