Baked Stuffed Mushrooms On Toast

Ingredients

  • 1 lb fresh mushrooms
  • 1 tbsp butter
  • 1/2 onion, sliced
  • 1 tbsp flour
  • 1 cup stock
  • 1/2 cup bread crumbs
  • salt and pepper to taste
  • dash of cayenne
  • toasted bread slices

Method

  1. 1 Remove mushroom stalks. Peel cups and soak in cold water with lemon juice to prevent discoloration. Chop and scrape stalks.
  2. 2 Sauté chopped stalks and sliced onion in butter for 10 minutes. Stir in flour and cook for 5 minutes.
  3. 3 Add stock, bread crumbs, salt, pepper, and cayenne. Simmer until thickened.
  4. 4 Fill mushroom cups with the mixture. Sprinkle with extra crumbs and place on toasted bread rounds.
  5. 5 Bake in a moderate oven (350°F) for 15 minutes.
