Baked Stuffed Mackerel
Ingredients
- 2 mackerel
- 2 tsp bread crumbs
- 1/2 shallot, finely chopped
- 1 tsp finely chopped parsley
- 1/2 tsp dried powdered herbs
- 1/2 oz butter or dripping
- Salt and pepper to taste
Method
- 1 Split open the mackerel and remove the back-bones cleanly.
- 2 Grease a baking tin and place one mackerel skin-side down.
- 3 Mix herbs, parsley, shallot, bread crumbs, salt, and pepper; sprinkle over the fish.
- 4 Place the second mackerel on top, skin-side up, and dot with butter.
- 5 Bake for 10-15 minutes. Serve sprinkled with brown bread crumbs.
