Baked Stuffed Mackerel

Ingredients

  • 2 mackerel
  • 2 tsp bread crumbs
  • 1/2 shallot, finely chopped
  • 1 tsp finely chopped parsley
  • 1/2 tsp dried powdered herbs
  • 1/2 oz butter or dripping
  • Salt and pepper to taste

Method

  1. 1 Split open the mackerel and remove the back-bones cleanly.
  2. 2 Grease a baking tin and place one mackerel skin-side down.
  3. 3 Mix herbs, parsley, shallot, bread crumbs, salt, and pepper; sprinkle over the fish.
  4. 4 Place the second mackerel on top, skin-side up, and dot with butter.
  5. 5 Bake for 10-15 minutes. Serve sprinkled with brown bread crumbs.
