Baked Stuffed Fish With Bread Crumb Filling
Ingredients
- 1 whole fish (cleaned, head and tail on, eyes and fins removed)
- 1 cup bread crumbs
- 3 tablespoons shortening
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 small onion, grated
- 1 egg
- Additional shortening for rubbing
- Flour for dusting
- Boiling water for basting
Method
- 1 Mix bread crumbs, 3 tablespoons shortening, salt, paprika, grated onion, and egg to create the filling.
- 2 Stuff the fish with the mixture and fasten the opening with string or toothpicks.
- 3 Place fish in a baking dish, rub generously with shortening, and dust with flour.
- 4 Bake in a 425°F oven for approximately 18 minutes per pound plus 20 minutes, basting every 15 minutes with boiling water.
