  • 1 whole fish (cleaned, head and tail on, eyes and fins removed)
  • 1 cup bread crumbs
  • 3 tablespoons shortening
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 small onion, grated
  • 1 egg
  • Additional shortening for rubbing
  • Flour for dusting
  • Boiling water for basting

Method

  1. 1 Mix bread crumbs, 3 tablespoons shortening, salt, paprika, grated onion, and egg to create the filling.
  2. 2 Stuff the fish with the mixture and fasten the opening with string or toothpicks.
  3. 3 Place fish in a baking dish, rub generously with shortening, and dust with flour.
  4. 4 Bake in a 425°F oven for approximately 18 minutes per pound plus 20 minutes, basting every 15 minutes with boiling water.
