Baked Stuffed Eggplant Boats With Meat

Ingredients

  • 2 medium eggplants
  • 1 onion, minced
  • Oil or Crisco
  • ¼ lb minced meat (cold or raw)
  • Green mango pepper, chopped
  • Worcestershire sauce or piccalilli (optional)
  • Breadcrumbs

Method

  1. 1 Steam or bake eggplants until tender. Cut lengthwise in half and scoop out the pulp, leaving the skins intact.
  2. 2 Mince the onion and brown it in oil or Crisco. Add the minced meat and green mango pepper, cooking until meat is done.
  3. 3 Chop the reserved eggplant pulp and mix it into the meat mixture. Stir in Worcestershire sauce or piccalilli if desired.
  4. 4 Fill the empty eggplant skins with the mixture. Cover the tops with breadcrumbs and bake until heated through and golden.
