Baked Stuffed Crabs With Egg And Breadcrumbs

  • large crabs
  • grated bread-crumbs
  • hard-boiled eggs
  • salt
  • paprika
  • grated nutmeg
  • lemon juice
  • melted butter or cream
  • oil
  • butter for dotting

Method

  1. 1 Boil the crabs, remove the meat, and rub the empty shells with oil.
  2. 2 For each crab, mix the meat with one-third the quantity of grated bread-crumbs and one chopped hard-boiled egg.
  3. 3 Season with salt, paprika, nutmeg, and lemon juice, then bind the mixture into a paste using melted butter or cream.
  4. 4 Fill the crab shells with the mixture, cover with breadcrumbs, dot with butter, and brown in a moderate oven (350°F).
