Baked Stuffed Crabs With Egg And Breadcrumbs
Ingredients
- large crabs
- grated bread-crumbs
- hard-boiled eggs
- salt
- paprika
- grated nutmeg
- lemon juice
- melted butter or cream
- oil
- butter for dotting
Method
- 1 Boil the crabs, remove the meat, and rub the empty shells with oil.
- 2 For each crab, mix the meat with one-third the quantity of grated bread-crumbs and one chopped hard-boiled egg.
- 3 Season with salt, paprika, nutmeg, and lemon juice, then bind the mixture into a paste using melted butter or cream.
- 4 Fill the crab shells with the mixture, cover with breadcrumbs, dot with butter, and brown in a moderate oven (350°F).
