Baked Stuffed Cod With Sherry Sauce
Ingredients
- 1 codfish fillet
- 1 cup seasoned bread crumbs
- Salt and pepper to taste
- 2 cups sherry
- 1 tablespoon mushroom catsup
- 2 cups fish or chicken stock
- Butter for paper
- Additional bread crumbs
- Butter for dotting
- 1 teaspoon beef extract
- Anchovy paste
- 2 tablespoons butter
- Juice of half a lemon
Method
- 1 Stuff the fish with seasoned bread crumbs and season with salt and pepper.
- 2 Pour sherry and mushroom catsup over the fish. Add stock, cover with buttered paper, and bake, basting often.
- 3 When nearly done, sprinkle with bread crumbs, dot with butter, and bake until brown.
- 4 Remove fish. To the pan juices, add beef extract, anchovy paste, butter, and lemon juice. Boil and pour over fish.
