Baked Squash Fritters
Ingredients
- 1 heaping cup mashed Hubbard squash (baked)
- 1 heaping tablespoon butter
- 1 heaping tablespoon flour
- 1 cup milk
- Salt and pepper to taste
- 1 egg, beaten
Method
- 1 Mash the baked Hubbard squash in a bowl.
- 2 Stir in the butter, flour, milk, salt, pepper, and beaten egg until well combined.
- 3 Heat a skillet or griddle over medium heat.
- 4 Pour batter to form small cakes and cook until golden brown on both sides.
