Baked Squash Fritters

Ingredients

  • 1 heaping cup mashed Hubbard squash (baked)
  • 1 heaping tablespoon butter
  • 1 heaping tablespoon flour
  • 1 cup milk
  • Salt and pepper to taste
  • 1 egg, beaten

Method

  1. 1 Mash the baked Hubbard squash in a bowl.
  2. 2 Stir in the butter, flour, milk, salt, pepper, and beaten egg until well combined.
  3. 3 Heat a skillet or griddle over medium heat.
  4. 4 Pour batter to form small cakes and cook until golden brown on both sides.
