Baked Spinach And Egg Casserole
Ingredients
- 2 lbs spinach
- 4 eggs
- breadcrumbs
- olive oil or melted butter
Method
- 1 Boil the spinach, then chop it very fine.
- 2 Beat 2 eggs for every pound of spinach and mix thoroughly with the chopped spinach.
- 3 Place the mixture in a vegetable dish, sprinkle with breadcrumbs, and drizzle with olive oil or melted butter.
- 4 Heat thoroughly in a 350°F oven.
