Ingredients

  • 2 handfuls sorrel
  • 2 dessertspoonfuls cream
  • 1 lump of butter (size of a pigeon's egg)
  • Pepper and salt to taste
  • 6 hard-boiled eggs
  • Breadcrumbs
  • Butter for topping
  • Tomatoes for garnish

Method

  1. 1 Cook the sorrel until soft, then reduce it to a puree.
  2. 2 Stir in the cream, butter, pepper, and salt to create a smooth sauce.
  3. 3 Peel the hard-boiled eggs, separate the yolks from the whites, and crumble the yolks into the sorrel puree.
  4. 4 Slice the egg whites lengthwise and arrange them on a hot serving dish.
  5. 5 Pour the sorrel and yolk mixture over the egg whites, sprinkle with breadcrumbs, and dot with butter.
  6. 6 Bake in a moderate oven (350°F) for 10 minutes, then serve garnished with tomatoes.
