Baked Sorrel And Egg Whites
Ingredients
- 2 handfuls sorrel
- 2 dessertspoonfuls cream
- 1 lump of butter (size of a pigeon's egg)
- Pepper and salt to taste
- 6 hard-boiled eggs
- Breadcrumbs
- Butter for topping
- Tomatoes for garnish
Method
- 1 Cook the sorrel until soft, then reduce it to a puree.
- 2 Stir in the cream, butter, pepper, and salt to create a smooth sauce.
- 3 Peel the hard-boiled eggs, separate the yolks from the whites, and crumble the yolks into the sorrel puree.
- 4 Slice the egg whites lengthwise and arrange them on a hot serving dish.
- 5 Pour the sorrel and yolk mixture over the egg whites, sprinkle with breadcrumbs, and dot with butter.
- 6 Bake in a moderate oven (350°F) for 10 minutes, then serve garnished with tomatoes.
