Baked Shad With Lemon Butter Sauce
Ingredients
- 1 whole shad
- Butter, for greasing pan
- Boiling water, as needed
- Melted butter, for basting
- Lemon juice, for basting
- Salt, to taste
- Pepper, to taste
- 1 tbsp butter
- 1 tbsp flour
- 1 cup stock
- 2 egg yolks
- Juice of ½ lemon
Method
- 1 Preheat oven to 350°F. Butter a baking pan and place the shad inside. Add enough boiling water to the pan to prevent burning.
- 2 Baste the fish frequently with melted butter and lemon juice while baking. Season with salt and pepper.
- 3 While the fish cooks, melt butter and flour in a saucepan until brown. Slowly whisk in stock and cook, stirring constantly, until thickened.
- 4 Remove sauce from heat. Whisk in beaten egg yolks and lemon juice. Pour the sauce over the baked fish and serve immediately.
