Baked Shad With Lemon Butter Sauce

Ingredients

  • 1 whole shad
  • Butter, for greasing pan
  • Boiling water, as needed
  • Melted butter, for basting
  • Lemon juice, for basting
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup stock
  • 2 egg yolks
  • Juice of ½ lemon

Method

  1. 1 Preheat oven to 350°F. Butter a baking pan and place the shad inside. Add enough boiling water to the pan to prevent burning.
  2. 2 Baste the fish frequently with melted butter and lemon juice while baking. Season with salt and pepper.
  3. 3 While the fish cooks, melt butter and flour in a saucepan until brown. Slowly whisk in stock and cook, stirring constantly, until thickened.
  4. 4 Remove sauce from heat. Whisk in beaten egg yolks and lemon juice. Pour the sauce over the baked fish and serve immediately.
