Baked Semolina Pudding With Pine Nuts
Ingredients
- 6.5 oz semolina
- 3.5 oz sugar
- 2 oz pine nuts, chopped and pounded
- 1 small piece butter
- 1 quart milk
- 4 eggs
- 1 pinch salt
- Lemon peel, to taste
- Butter for greasing molds
- Fine bread crumbs for dusting
Method
- 1 Cook semolina in milk over heat, stirring until it begins to thicken.
- 2 Stir in the pounded pine nuts and sugar, followed by the butter and salt. Remove from heat.
- 3 Allow the mixture to cool completely. Once cool, beat in the eggs and lemon peel.
- 4 Grease small molds with butter and dust with fine bread crumbs. Fill molds with the mixture.
- 5 Bake in a moderate oven (350°F) until set and golden brown.
