Baked Semolina Pudding With Pine Nuts

Ingredients

  • 6.5 oz semolina
  • 3.5 oz sugar
  • 2 oz pine nuts, chopped and pounded
  • 1 small piece butter
  • 1 quart milk
  • 4 eggs
  • 1 pinch salt
  • Lemon peel, to taste
  • Butter for greasing molds
  • Fine bread crumbs for dusting

Method

  1. 1 Cook semolina in milk over heat, stirring until it begins to thicken.
  2. 2 Stir in the pounded pine nuts and sugar, followed by the butter and salt. Remove from heat.
  3. 3 Allow the mixture to cool completely. Once cool, beat in the eggs and lemon peel.
  4. 4 Grease small molds with butter and dust with fine bread crumbs. Fill molds with the mixture.
  5. 5 Bake in a moderate oven (350°F) until set and golden brown.
